Lemon & PoppySeed Cupcake


السلام عليكم....
Lama xupdate resepi2 baking & resepi lauk pauk.. hehhe, so arini ada kesempatan nak share resepi cupcake dari Sarah Cook, light & fluffy, yg penting sgt sedappp!! Arini angin kuatttt sesgt, td masa g amik Aqil, si Aiman sampe xleh nak berjalan sbb angin kuat sgt sampe berat dia nak bejalan, so i dukung la dia, aloloooo cian baby mama:))...


Hujan sgt2 lebat skang ni, cam kat Msia lak.. heheh, sini jarang nak hujan lebat2 cam kat Msia, renyai2 je, tp dlm minggu ni ramalan cuaca mmg hujan sepanjang minggu,  macam nak turun snow je, dgn suhu makin rendah (bawah 10C).. pejam celik da masuk akhir tahun, & nak masuk tahun baru, dgn azam yg baru..hehhe. Orait jom semak resepi sedap & menyelerakan ni, mudah je nak buat, lembut sgt cupcake ni, cam beli di kedai punye, tp ini home-made yeaaaaaaa....


BAHAN :

225g self-raising flour
175g golden caster sugar
Lemons zest 2 tbsp
1 tbsp poppy seeds , toasted
3 eggs
100g natural yogurt
175g butter (melted)

Lemon Icing :

225g butter , softened
400g icing sugar, sifted
Lemon juice (1 lemon)
Few drops yellow food colouring
Icing flowers or yellow sprinkles (optional for decorate)

Heat oven to 180C/160C fan/gas 4 and line a 12-hole muffin tin with cupcake or muffin cases. Mix the flour, sugar, lemon zest and poppy seeds together in a large mixing bowl. Beat the eggs into the yogurt, then tip this into the dry ingredients with the melted butter. Mix together with a wooden spoon or whisk until lump-free, then divide between the cases. Bake for 20-22 mins until a skewer poked in comes out clean - the cakes will be quite pale on top still. Cool for 5 mins in the tin, then carefully lift onto a wire rack to finish cooling.
To ice, beat the softened butter until really soft in a large bowl, then gradually beat in the icing sugar and lemon juice. Stir in enough food colouring for a pale lemon colour, then spoon the icing into a piping bag with a large star nozzle.
Ice one cake at a time, holding the piping bag almost upright with the nozzle about 1cm from the surface of the cake. Pipe one spiral of icing around the edge, then pause to break the flow before moving the nozzle towards the centre slightly and piping a second, smaller spiral that continues until there are no gaps in the centre. Slightly 'dot' the nozzle into the icing as you stop squeezing to finish neatly. Repeat to cover all the cakes, then top with sugar decorations or scatter with sprinkles.

Plain Vanilla Muffin


Muffin ni i wat utk mkn2 masa proses angkut2 brg masuk kontena 2 family Firth Park yg balik Msia br2 ni.. not bad, manis2 buah & gebu muffin ni, lg sedap bla ada almond flake kat atas tu, crunchy gitu! Thanks to CMG, izinkan mamma olyn kongsi resepi disini utk rujukan yea:)..

BAHAN :

Butter 250 g
Telur 3 biji gred A
Self-raising flour 1 1/2 cawan
Gula halus 3/4 cawan
Susu segar 1/2 cawan (mat guna susu cair)
Esen vanilla 1/2 sudu
Kepingan badam*
Strawberry jem* (*optional)

First, panaskan oven pada suhu 180C. Atur paper cup dalam tin muffin atau gunakan muffin cup jenis keras. Putar mentega dengan gula hingga putih, masukkan telur satu persatu sambil terus memutar hingga kembang. Perlahankan speed, masukkan tepung berselang seli dengan susu, hingga habis. Masukkan esen vanilla dan kacau rata. Sudukan 3/4 penuh dalam paper cup atau muffin cup tadi. Tabur badam dan bakar 25 minit atau hingga kuning keemasan.

UNTUK STRAWBERRY MUFFIN :- Sudukan 1/2 camca teh strawberry jem (kalau dapat jem yang kurang gula), taburkan badan keping dan bakar hingga masak. Sejukkan atas jaringan sepenuhnya sebelum dihidang....


Oh yea last week Ain (anak bongsu K.hanim) ada dtg umah, dia suka dtg umah klu cuti sekolah @ weekend, suka main gan 2 kiddo ni & baking2 gan i.. hehhe, ada juga la puteri dlm umah ni:).. slalu klu dia dtg i suka wat kek gan dia, dia pun suka tolong, siap copy resepi lagi & dia kata nnti bla Ain wat, Ain bagi aunt rasa yea:D.. ahaks. Kali ni i ajak dia wat 'Orange Fairy Cupcake' (adaptasi dr resepi 'Blended Orange Cake').. wahhh suke la dia..

Butter Vanilla Cupcake


Resepi ni i amik dr Maklang Azie Bake..simple sangat, i wat kaler pink, sweet pink:).. Suka baca blog MakLang Azie ni, banyak bagi tips & dia juga buat kelas bakery, asyik full je, mesti sronok blajar buat kek gan MakLang ni:), btw muffin ni sedap & sangat lembut, nak buat pun mudah je:)..satu tips MakLang Azie ni klu nak kek yg permukaan rata, xmerekah cam gunung berapi tue..letak sikit je butter..klu tgk resepi dia pun kebanyakkan butter dia letak dlm 90gram je..hehe, utk muffin ni i try letak sama cam MakLang buat, mmg betul permukaan rata, cantik je..thanks for the tips:)

BAHAN :

Tepung naik sendiri 113g
Gula castor 90g
Telur 2biji
Butter 90g
Baking powder 1sudu teh
Esen vanila 1sudu teh
Pewarna merah 1/2 sudu teh
White chocolate cube (additional)


First, ayak tepung + baking powder, then masukkan semua bhn dlm bekas yg bersih dan pukul hingga gebu. Isikan 1/2 adunan ke dalam acuan muffin & tabur white chocolate cube, bakar selama 15minit pada suhu 180C mengikut oven masing2. Sejukkan muffin diatas tray & boleh dihidang..

Strawberry Mini Muffin


Oopss.. baking lagi:). I tgk ada lagi baki strawberry, xbole tahan lama nnti rosak. I ingat nak wat plain vanilla muffin ja, tp terrr..cipta muffin strawberry la plak, semu tu bermula dari adunan yg basic tp boleh diolah kedalam pelbagai jenis bentuk, rasa mengikut citarasa masing2, wahhh, da pandai bagi hujah pasal baking yea mama nie..haha, mama baru belajar, so sedikit sebanyak i share la pe yg i tau k:).

BAHAN:

Butter Lurpak 150gram
Tepung gandum 1cawan
Baking powder 1sudu teh
Gula halus 1cawan
Telur gred A 2biji
Full cream milk 1cawan
Vanilla esen 1sudu teh
Strawberry emulco 1sudu
Fresh strawberry 1cawan (potong dadu kecil), beberapa biji utk hiasan
Coklat emulco (additional)

Firstly, masukkan tepung + baking powder, ayak sebanyak 2kali. Dgn menggunakan mixer, pukul butter dan gula hingga gebu. Kemudian, masukkan telur satu persatu dan masukkan vanilla essence + strawberry emulco. Seterusnya, masukkan tepung berselang seli dengan susu (tepung mesti last skali). Then, off mixer dan masukkan strawberry yg dipotong dadu, gaul rata. Masukkan adunan ke dalam acuan muffin yg digris dgn butter(i guna silicone mould). Masak dalam oven selama 30 minit pada suhu 170C (bergantung pada oven masing2). Gunakan kaedah mencucuk lidi di tengah kek/muffin, jika lidi bersih menandakan kek telah masak..MOIST & FRESH FROM OVEN, LETS TRY!

* Hanya masukkan adunan 1/2 ke dalam acuan muffin utk jadikan mini muffin yg cute:)

* Xsabar2 nak makan, tis 2 kid tunggu je dpn oven sampe muffin ni masak tau, i sempat sejukkan 15minit je atas tray, nangis2 nak makan muffin cute ni, mamanye sibuk nak hias2..haha *

Chocolate Banana Muffin


Petang kemarin teringin plak nak makan mini cake..so i decide to make a muffin:) Resepi ni i amik dr Mat Gebu, wahhh tgk muffin dia semua gebu-gebu belaka..hehe. I tgk pisang ada balance lagi, mmm y not masukkan skali pisang, klu x i nak wat chocolate muffin je. Aqil mesti suka!

BAHAN :

Self-raising flour 150gram
Lurpak unsalted butter 150gram(cairkan)
Garam 1/2 sudu
Gula 150gram
Telur 1biji
Fresh milk 1cawan
Pisang(dilecek)
Serbuk koko + Nescafe + Air panas(mix all together = coco pes)
Chocolate chip

Panaskan oven pada suhu 190C. Masukkan self-raising flour + garam + gula dalam satu mangkuk yg bersih & kering. Dalam bekas yg lain masukkan butter + telur + susu segar, whisk sehingga sebati. Kemudian tuang adunan butter ini ke dalam adunan tepung(bekas pertama tadi). Gaul rata tp sekejap sahaja tau. Kemudian masukkan pisang yg dilecek td. Gaul mesra. Kemudian bahagi adunan kepada 2 bahagian. Satu bahagian biar pd asal, satu lagi bahagian masukkan pes coklat. Sapu butter pd acuan muffin, dan masukkan adunan tadi berselang seli, kemudian tabur chocolate chip. Masukkan dlm oven, bakar selama 30 minit. Siap..yummm yumm..

Blueberry Muffin


My kids love cake! So, tis time i made them a healthy & fresh blueberry muffin:). Why don't u try wit ur kids & let them explore fun of baking wit u..

BAHAN :

Lurpak light salted butter(softened)(125 gram)
Self-raising flour(125 gram)
2 biji telur
Almond oil
Cinnamon powder
Gula(90 gram)
Fresh blueberries(1/2 mashed & 1/2 for topping)
Mascarpone cheese(topping)

First, preheat oven to 180 degree. Sementara tu, masukkan butter + gula, pukul hingga gebu. Then, masukkan almond oil + telur satu persatu. Dalam bekas yg lain, masukkan self-raising flour + cinnamon powder & mix together. Kemudian masukkan adunan tepung ke dalam adunan butter sedikit demi sedikit dan masukkan mashed blueberry & mix well. Then, spoon the mixture into the cupcake case & bake in the preheated oven for 15 minutes. Bla da masak, biarkan sejuk sebentar & spread thinly with mascarpone cheese and top wit blueberry:) Done! Yummy....
